Abstract:	The grain amaranth production can play importance role in ecological plant production system in the future. The nutritive value of grain amaranth (amino acide lysine, vitamin C, iron, carotene, calcium, folic acid and sulfur-containing) processed as functional food. The grain amaranth is recognised as a perspective crop suitable for production of highly nutritive food also under our climate conditions. The global warming has significant effect on Hungarian climate, too, so we have to reckon with years of drought. My paper is about baking of bread from mixed winter wheat and amaranth flour. We used free plant protection product milled flour, which are from ecological farms.
